
Karlyachi Loncha
Maharashtrian pickle made with bitter gourd, red chilli powder, mustard seeds. Pairs well with rice and roti.

- salt (optional) (whole)
- karela — 100 g (chopped)
- Mustard Oil — 25 g (whole)
- Red Chilli Powder (Lal Mirch) — 2 tsp (ground)
Tempering
- methi seeds — 1.8 g (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
Method
- Wash, deseed and finely chop the bitter gourd. Sprinkle with salt and set aside to drain its bitter juices.
- Dry roast the mustard seeds and fenugreek seeds lightly, cool and coarsely grind them.
- Mix the bitter gourd with the ground spices, red chilli powder and salt. Heat the mustard oil to smoking, cool slightly and pour over the mix.
- Transfer to a clean, dry glass jar, ensure oil covers the pickle, and let it mature for a few days before serving.
