  1. To prepare Rajasthani Kachri ki Chutney Recipe (Wild Cucumber Chutney), peel and cut the wild cucumber (kachri); taste a small piece first as it can sometimes be bitter, and discard if so.
  2. Add the kachri, garlic, dry red chillies, cumin seeds, curd and salt to a mixer grinder and grind to a smooth paste. Add a little more curd if the paste feels too thick.
  3. Heat ghee in a small pan and add the cumin seeds; let them splutter.
  4. Add the ground chutney mixture to the pan and cook on medium flame for 3-4 minutes, stirring occasionally.
  5. Transfer to a bowl and serve the Kachri Ki Chutney along with roti or paratha.
