- Ghee — 4.5 g (whole)

- Kachri (Fresh Wild Desert Melon) — 6 piece (chopped)
- Curd — 3 tbsp (whole)
- Garlic — 12 piece (chopped)
Tempering
- dry red chillies — 4 piece (whole)
- Cumin Seeds — 1 tbsp (whole)
Method
- To prepare Rajasthani Kachri ki Chutney Recipe (Wild Cucumber Chutney), peel and cut the wild cucumber (kachri); taste a small piece first as it can sometimes be bitter, and discard if so.
- Add the kachri, garlic, dry red chillies, cumin seeds, curd and salt to a mixer grinder and grind to a smooth paste. Add a little more curd if the paste feels too thick.
- Heat ghee in a small pan and add the cumin seeds; let them splutter.
- Add the ground chutney mixture to the pan and cook on medium flame for 3-4 minutes, stirring occasionally.
- Transfer to a bowl and serve the Kachri Ki Chutney along with roti or paratha.
