  1. Squeeze the fermented gundruk to remove excess moisture, then chop it roughly.
  2. Dry roast the mustard seeds and fenugreek seeds until fragrant, cool, then coarsely crush with the red chilli powder.
  3. Heat the mustard oil until it just starts to smoke, then remove from heat and let it cool slightly.
  4. Toss the gundruk with salt and the crushed spice mix, then pour over the cooled mustard oil and mix well.
  5. Store in a clean, dry glass jar; serve alongside rice, dal and curry.
