
Gundruk Achar
Fermented greens pickle with mustard oil and chilli. Tangy, spicy Sikkimese condiment for rice meals.

Main
- Gundruk (Fermented Leafy Green - Sikkim/Northeast) — 200 g (ground)
- Red Chilli Powder (Lal Mirch) — 2 tsp (ground)
- salt — 20 g (whole)
- Mustard Oil — 0.5 cup (whole)
Tempering
- Mustard Seeds (Black) — 1 tsp (whole)
- methi seeds — 1.8 g (whole)
Method
- Squeeze the fermented gundruk to remove excess moisture, then chop it roughly.
- Dry roast the mustard seeds and fenugreek seeds until fragrant, cool, then coarsely crush with the red chilli powder.
- Heat the mustard oil until it just starts to smoke, then remove from heat and let it cool slightly.
- Toss the gundruk with salt and the crushed spice mix, then pour over the cooled mustard oil and mix well.
- Store in a clean, dry glass jar; serve alongside rice, dal and curry.
