- Tamarind — 100 g (whole)
Tempering
- Mustard Seeds (Black) — 3 g (whole)
- Curry Leaves — 2 g (whole)
- dry red chillies — 3 g (whole)
- Asafoetida (optional) — 0.4 g (whole)
- Coconut Oil — 2 tbsp (whole)
Method
- Soak the tamarind in warm water and extract a thick pulp.
- Heat the coconut oil in a pan. Add mustard seeds and let them splutter, then add curry leaves, dry red chilli, and a pinch of hing.
- Add the tamarind pulp and jaggery. Simmer on low heat for 10-12 minutes, stirring often, until it reduces to a thick, glossy sauce.
- Season with salt, cool, and store in a clean jar. Serve a spoonful mixed into idli, dosa, or hot rice.
