  1. Clean and cube the Kodava Pork (Kuttiyattu style) and Chicken Liver (Fresh) separately, then pat dry. Chop the onion, Tomato, Ginger and Garlic.
  2. Heat Coconut Oil in a heavy pot.
  3. Add Mustard Seeds and let them splutter, then add Urad Dal and fry until golden.
  4. Add Curry Leaves and let them crackle for a few seconds.
  5. Add the chopped onion and saute on medium flame until deep golden brown.
  6. Add Ginger and Garlic, and saute for a minute until the raw smell disappears.
  7. Add chopped Tomato and cook down until pulpy and the oil separates.
  8. Add Turmeric Powder, Red Chilli Powder and coriander powder. Cook briefly until fragrant, taking care not to scorch the spices.
  9. Add the cubed pork and sear on high flame for a few minutes until well browned on all sides.
  10. Pour in enough hot liquid to just cover the pork, add salt to taste, cover and simmer on medium-low flame until the pork is nearly tender, about 40 minutes.
  11. Add the Chicken Liver (Fresh) pieces and simmer for another 10 minutes until just cooked through. Do not overcook or the liver will turn rubbery.
  12. Stir in the Vinegar (White) and simmer uncovered for a final 5 minutes. This tang is what defines Sorpotel. Adjust salt and garnish with Coriander Leaves if desired. Sorpotel tastes best when rested a day before serving, per Goan Christmas tradition.
