
Goan Christmas Sorpotel
Fiery pork offal and liver curry with vinegar. Goan Catholic Christmas essential that tastes better after 3 days.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Kodava Pork (Kuttiyattu style) — 100 g (chopped)

- Vinegar (White) — 100 g (whole)
- Garlic — 1 tsp (ground)
- Chicken Liver (Fresh) — 100 g (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- onion — 2 piece (chopped)
- coriander powder — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 2 tbsp (whole)
- Urad Dal — 1 tsp (whole)
- Curry Leaves — 8 piece (ground)
Method
- Clean and cube the Kodava Pork (Kuttiyattu style) and Chicken Liver (Fresh) separately, then pat dry. Chop the onion, Tomato, Ginger and Garlic.
- Heat Coconut Oil in a heavy pot.
- Add Mustard Seeds and let them splutter, then add Urad Dal and fry until golden.
- Add Curry Leaves and let them crackle for a few seconds.
- Add the chopped onion and saute on medium flame until deep golden brown.
- Add Ginger and Garlic, and saute for a minute until the raw smell disappears.
- Add chopped Tomato and cook down until pulpy and the oil separates.
- Add Turmeric Powder, Red Chilli Powder and coriander powder. Cook briefly until fragrant, taking care not to scorch the spices.
- Add the cubed pork and sear on high flame for a few minutes until well browned on all sides.
- Pour in enough hot liquid to just cover the pork, add salt to taste, cover and simmer on medium-low flame until the pork is nearly tender, about 40 minutes.
- Add the Chicken Liver (Fresh) pieces and simmer for another 10 minutes until just cooked through. Do not overcook or the liver will turn rubbery.
- Stir in the Vinegar (White) and simmer uncovered for a final 5 minutes. This tang is what defines Sorpotel. Adjust salt and garnish with Coriander Leaves if desired. Sorpotel tastes best when rested a day before serving, per Goan Christmas tradition.
