Authentic Sindhi-Hindu Aur Jo Ras — a tangy thin curry built on crushed garlic, mustard seeds, and tamarind, with chunks of radish and potato simmering in. Stiff besan dough rolls (oblong gatta-style) are dropped into the simmering curry and cook in their own steam to a soft-firm bite. The minimal-spice profile lets the garlic and mustard do the heavy lifting. Distinct from Sindhi Kadhi (which uses besan as a thickener) — Aur Jo Ras is a thin soup-like curry where the besan is in roll/dumpling form, not dispersed.

  1. Heat oil in a wide pot on medium-low. Add crushed garlic (DO NOT brown — Sindhi style is to keep it pale) and slit green chillies. Sauté 30 seconds.
  2. Add mustard seeds. As soon as they pop (5-10 seconds), add sliced radish and cubed potatoes.
  3. Pour in 2 cups (about 500 ml) water. Add tamarind paste, salt, and turmeric. Bring to a boil, then reduce to medium and simmer until potatoes are half-cooked (8-10 minutes).
  4. Meanwhile, prepare besan rolls: in a bowl combine besan with salt, a pinch of crushed garlic, and 1/2 tsp red chilli powder. Knead with very little water (1-2 tbsp) into a stiff non-sticky dough.
  5. Divide besan dough into 6-7 oblong rolls (each finger-sized). Drop them gently into the simmering curry.
  6. Add another 1-2 cups water if curry is too thick (Aur Jo Ras is supposed to be thin, almost soup-like). Cover and simmer on medium-low 15-30 minutes until both potatoes and besan rolls are fully cooked through.
  7. Adjust salt and tang. Garnish with chopped fresh coriander leaves. Serve hot with steamed rice — it's a soup-curry meant to be poured over rice.
