Water chestnut (singhara/panifal) is the fresh aquatic corm with sweet, crisp, slightly starchy flavor. Used in singhara atta (for vrat/fasting preparations), water chestnut salad, stir-fries, and sweet preparations. Very popular during Navratri fasting. Rich in potassium and fiber. The fresh form is sweet and crisp; the dried flour (singhara atta) is used for fasting rotis and halwa.
