Phutka (wild Jharkhand earthball mushroom) is a large, round, white wild mushroom harvested from Jharkhand forests. A tribal seasonal delicacy consumed only when young and completely white inside. Used in simple stir-fries with mustard oil and mustard seeds. Very tender and mild when fresh. Has earthy, slightly nutty mushroom flavor. Strictly seasonal — found only in monsoon forests.
