Tripura's festive fried pancake: a semolina-flour batter loosened with milk, fried golden in oil and steeped in a light sugar syrup, finished with cardamom.

Main
- Milk Powder — 40 g
- salt (optional) (whole)
- sugar — 0.5 cup (whole)
- sooji — 15 g
- All-purpose Flour — 40 g
Tempering
Method
- Whisk the All-purpose Flour and sooji (semolina) with the Milk Powder and enough water into a smooth, lump-free batter; rest it covered for 15-20 minutes.
- Meanwhile, dissolve the sugar in a little water over low flame to make a light syrup; keep it warm.
- Heat the oil in a shallow kadhai over medium flame.
- Ladle spoonfuls of the batter into the hot oil, spreading gently into small rounds.
- Fry 2-3 minutes on each side until golden and lightly crisp at the edges.
- Lift out the fried malpua and drop them straight into the warm sugar syrup for a minute so they soak it up.
- Lift out onto a plate, sprinkle with Cardamom, and serve warm.
