
Lemon Sevai
A tangy South Indian tiffin dish where steamed idli-rice batter is pressed into thin noodle strands (sevai) and tossed in a mustard-curry leaf tempering with green chillies, turmeric and fresh lemon juice. Light, fragrant, and a popular breakfast alternative to idli and dosa.

- Idli Rice — 2 cup (ground)
- Lemon — 2 tbsp (chopped)
- mustard — 1 tsp (ground)
- green chillies — 2 piece (chopped)
- Asafoetida (optional) — 0.5 g (ground)
- Sesame Oil — 2 tbsp (whole)
- Turmeric Powder — 0.5 tsp (ground)
Tempering
- Curry Leaves — 1 piece (ground)
Method
- Wash and soak the idli rice in water for 2 hours. Drain and grind in a mixer grinder with a little water to a smooth, thick idli-batter consistency.
- Grease idli moulds lightly with oil and pour in the batter. Steam for 10 minutes until fully cooked.
- While the idlis are still hot, pass them through a sevai press (idiyappam press) to extrude into thin noodle strands. Set the sevai aside.
- Heat sesame oil in a kadai. Add mustard seeds and let them splutter for a few seconds.
- Add chopped green chillies, curry leaves, turmeric powder and a pinch of asafoetida; saute for a few seconds until fragrant.
- Add the sevai strands and toss gently on low heat to coat evenly with the tempering without breaking the strands.
- Turn off the heat, squeeze in fresh lemon juice and mix well.
- Serve hot Lemon Sevai on its own or with coconut chutney.
