
Jharkhandi Mahua Laddu
Mahua flower sweet balls with rice flour and jaggery. Tribal festival sweet from forest produce.

Main
- Mahua Flower — 150 g
- Jaggery — 100 g (whole)
- salt (optional) (whole)
- rice — 100 g (ground)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Sun-dry and clean the mahua flowers, removing any stems, then grind into a coarse flour.
- Dry-roast the rice flour separately on medium heat for a few minutes until aromatic.
- Heat the mustard oil in a kadai on medium heat. Add the mahua flour and roast for 5-7 minutes, stirring continuously, until light brown.
- Add the roasted rice flour, mix well, and cook for 2-3 minutes.
- Add the powdered jaggery and cardamom powder, and cook for 5-7 minutes, stirring continuously, until the jaggery melts and the mixture binds together.
- While still warm, shape into round laddus. Let them cool and firm up before serving.
