Hilsa fish in mustard paste curry. Bengali classic adapted in Tripura with slightly more chilli heat.

  1. Heat the oil in a kadhai until it just smokes, then lower the flame and crackle the Cumin Seeds for 30 seconds.
  2. Rub the Hilsa Fish and the fish pieces with salt and Turmeric Powder and fry them 2 minutes a side; lift them out carefully.
  3. Add the chopped onion to the same oil and fry 6 minutes until golden.
  4. Stir in the Ginger and Garlic and cook a minute.
  5. Add the chopped Tomato with Red Chilli Powder, coriander powder and salt and cook 6 minutes until the oil separates.
  6. Pour in 350 ml hot water and simmer 5 minutes to build the jhol.
  7. Slide the Hilsa Fish and fish back in and simmer 5-6 minutes on low, spooning gravy over, until just cooked through.
  8. Garnish with Coriander Leaves and serve hot.
