
Gond Laddu Rajasthani

- gond — 40 g (ground)
- Wheat Flour (Atta) — 250 g (ground)
- sugar — 0.5 cup (whole)
- Ghee — 100 g (whole)
- badam — 30 g (whole)
Method
- Heat ghee in a heavy kadai on low flame; add the edible gum (gond) pieces and fry until they puff up, turn golden and crisp. Remove and crush into small pieces once cooled.
- In the same ghee, add wheat flour (atta) and roast on low-medium flame for 15-20 minutes, stirring continuously, until it turns golden brown and releases a nutty aroma.
- Add the crushed gond and chopped almonds to the roasted flour; mix well and cook for 2-3 minutes more.
- Remove from heat, add powdered sugar and cardamom powder, and mix thoroughly while the mixture is still warm.
- Let it cool slightly until handleable, then shape firmly into round ladoos while still warm.
