Method

  1. Knead the coarse whole wheat flour with melted ghee and a little warm water into a stiff dough; shape into small thick discs (baatis).
  2. Deep-fry the baatis slowly in ghee on low-medium flame until deep golden brown and cooked through, then let them cool slightly.
  3. Crush or grind the cooled baatis into a coarse, flaky crumb (churma).
  4. Warm the jaggery gently with a little ghee until it melts into a syrupy consistency, then mix it thoroughly into the crushed churma along with the chopped almonds and cardamom powder.
  5. While the mixture is still warm, shape it firmly into round ladoos by hand.
