Method
- Heat ghee in a heavy kadai on low flame; add gram flour (besan) and roast continuously, stirring, for 20-25 minutes on low heat until deep golden brown and richly aromatic -- the slow deep roast is key to the Rajasthani style.
- Keep stirring throughout to prevent lumps or burning; the besan should release ghee at the edges once fully roasted.
- Turn off the heat and let the roasted mixture cool until just warm.
- Mix in powdered sugar and cardamom powder thoroughly.
- Shape into firm round ladoos while the mixture is still warm and pliable.
