- Gram Flour — 100 g (whole)
- sugar — 0.5 cup (whole)
- Water — 60 ml (whole)
- salt (optional) (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Whisk the gram flour with water into a smooth, lump-free batter of medium-flowing consistency.
- Heat oil in a kadai; pour the batter through a perforated ladle (jhaara) directly into the hot oil to form tiny boondi pearls; fry briefly until just cooked but soft, then drain.
- In a separate pan, boil the sugar with a little water to a one-string sugar syrup; stir in the cardamom powder.
- Add the fried boondi to the warm sugar syrup and mix gently; let it soak and soften for a few minutes.
- While still warm, take small portions and shape into soft, round laddus.
- Let the laddus cool and set before serving.
