Mumbai street-style Anda Pav - whole boiled eggs simmered in a spiced onion-tomato masala, served with soft buttered pav. Bold, tangy and comforting.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Turmeric Powder — 0.5 tsp (ground)
- pav buns — 130 g
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- onion — 80 g
- ginger garlic paste — 10 g
- Tomato — 80 g
- boiled eggs — 100 g (whole)
- green chillies — 6 g
- salt (optional) (whole)
- coriander powder — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Heat oil in a kadhai. Add cumin seeds and let them splutter.
- Add finely chopped onion and saute until golden brown.
- Add ginger-garlic paste and green chillies; saute for a minute till the raw smell disappears.
- Add chopped tomato, turmeric, red chilli powder and coriander powder; cook until the tomato turns soft and the oil separates.
- Add a splash of water to loosen the masala, then slide in the halved boiled eggs; simmer for 3-4 minutes so the eggs soak up the masala.
- Adjust salt and garnish with coriander leaves.
- Lightly butter and toast the pav on a griddle until golden. Serve hot alongside the egg masala.
